Ingredients:

2 red bell peppers, cut

1 medium yellow onion, chopped

1 1/2 tsp chili powder

1 1/2 tsp ground cumin

1/2 tsp garlic powder

1/2 tsp salt

4 large tortillas

2 cups brown rice, cooked

2 cups shredded marble cheese Goat Cheese

1 can black beans, drained and rinsed

1 cup romaine lettuce

2 avocados (optional)

Salsa (optional)

Hot sauce (optional)

 

Directions:

  1. In a large skillet, combine bell peppers, onions, chili powder, cumin, garlic powder, salt with 4 tsp of water and sauté over medium high heat until soft, about 6-8 minutes.
  2. Assemble tortillas with desired toppings; add about 1/4 cup rice, beans, peppers, cheese, avocado, salsa and roll together tightly.
  3. On the skillet, place seam of burrito down to seal and let cook until golden brown and repeat on opposite side.
  4. Remove from heat, cut and enjoy!
